Karl’s Jalisco Pico de Gallo

Jan recently discovered that her birth father’s people live/lived in the mountainous region of along the Jalisco / Nayarit border. She asked for a Mexican Christmas with tamales this year. I decided that I needed a salad to go with them. A site I found describing Jalisco cuisine mentioned a pico de gallo of “pieces of jicama, orange, pineapple with lime juice and ground chili.”

Karl’s Meatloaf with Orange Marmalade Sauce

Jan requested that I make meatloaf for dinner. Both Jan and Eilene like the outsides of the loaf  to have plenty of “crusty bits.” One way to please them is to make mini-meatloaves. A second, easier, way is to not make the loaf too thick—a low thin loaf. Add some fry bread and a salad and you have a really nice meal.

Karl’s Fry Bread

Jan had requested meatloaf for dinner and I wanted a bread-like side dish to go with it. Jan has problems with digesting fats and she generally avoids white flour breads. Knowing that Jan would probably eat only a bite or two of this bread—Jan would be happy with just the salad and the meat—freed me to make it how I would really like it to be.

Karl’s Asian Pear-apple , Radish and Arugula Salad

I was looking for a vegetable side dish to go with my meatloaf. A few weeks ago, I discovered that letting the root vegetables marinate in a marmalade base worked really well as a salad dressing.  This is what I settled on for tonight’s salad.

Karl’s Beef Bone Broth

Myr has been sick and her doctor has put her on a “gut calming” diet. Bone broth is supposed to be good for what ails her. I have never made bone broth—it always seemed like too much work—actually most of the time is spent watching the pot bubble.

Karl’s Lox Schmear

I’m trying to catch up on my postings. While I did not stop cooking while Jan was working on her book, I did not have time to write them up. We were going to a party and as my contributions I thought I would bring crackers and schmear. My thought was to make a schmear that would be reminiscent of a classic lox bagel—lox, cream cheese, onions and capers.

While I like slow cooked chili with tender chunks of beef, I sometimes just want a quick meal for a weekday. While I have been known to simply use a brand name chili, sometimes I like to go just a step further. This may take a few more minutes than simply opening a can, but the flavor is worth the effort.

The NYTimes sends me emails with recipes several time a week. A recent email was all about cold noodle dishes. As I read through them I got a hankering for cold noodles, but none of their dishes really suited me. I borrowed a few ideas from their cellophane noodle salad, but mine is based more on my Vietnamese summer rolls.
