I have done Greek lamb for the last three Easter Sundays. While I love Greek lamb, I wanted to do something different for this year. After looking at dozens of recipes on-line I could not find any that really grabbed me.

Karl’s Turkish Artichoke, Tomato and Cucumber Salad
Adapted from a Whole Spice recipe
When Jan went to Sonoma a few months ago, she bought me some Istanbul Turkish Salad Seasoning from Whole Spice. I was planning to make a typical tomato and cucumber salad with it, but in searching the Whole Spice site I found their posted recipe. Of course, I could not make it the way they did, but it gave me ideas.

Karl’s Zatar Spinach Israeli Couscous
Jan suggested Israeli couscous as the starch dish to go with my Easter lamb. Ptitim, or “Ben-Gurion rice,” has only a nodding acquaintance with the fine grained couscous of the rest of the Middle East. It was created in the early years of the nation of Israel as a rice substitute.

Karl’s Sautéed Fresh Garbanzos
I am making my Middle Eastern Easter Feast. In addition to mixed olives and pickles, I saw some fresh garbanzos in my local Middle Eastern market. Pan roasting them with a bit of spice seemed like a quick and easy side dish for a feast.

Karl’s Chowder with Crawfish and Langoustine
I made corn chowder earlier this week, but Jan suggested that crawdaddy chowder was what Miriam needed—she is feeling sick from the medicine she is taking. She needs high fat and starches to settle the nausea. A bit of spice to cover the metallic taste in her mouth would also be nice.

Karl’s Strawberry Vinaigrette Cauliflower and Green Beans
I used half a head of cauliflower in the soup I was making this Sunday. I decided that I would make a side dish with the rest, but it was not quite enough to feed five people. I also had some green beans, left over from earlier in the week, but also not enough for a separate dish. Finally, the strawberries I bought on Saturday needed to be used up, because they were quickly starting to go bad. Of such happen stance, a new dish is created.

Karl’s Sesame Crackers II
I am making a soup for Sunday’s dinner and I decided that fresh crackers would go nicely with it. When I started making fresh crackers, Jan named them, “Karl Don’t Make These Crackers.” This was not because they were so bad, but because they were so good. These crackers were just too good to leave laying around tempting you to eat them.

Karl’s Peach and Strawberry Crisp
I saw some peaches and strawberries in the market today and I decided to make a fruit crisp. This is a dish from my childhood with many fond memories. This dish may also be called a crumble, because you crumble the topping over the fruit.

Claudia’s Apple Crisp
Before I left home for the first time, I sat down with my mother’s recipe box and wrote down my favorite dishes. She would usually only make this a few times each year, but we always loved it. Continue reading

Karl’s Buttermilk Roasted Chicken
My usual pattern of having the family over for dinner was disrupted by Captain America. We went to the movie and had deli dinner over at the kids’ place (yes, she’s 28 now, but she’s still our titmouse). I brought the dried meats, bread and cheese, Miriam provided the fruit and veggies.
