I needed a vegetable dish to go with my Dàn dàn noodles and Sichuan chicken. The Chinese are not much into uncooked vegetable side dishes, unless they are pickled in some way. This is the closest that Chinese cuisine comes to a “salad.”

Karl’s Orange and Baby Greens Salad with Cuban Vinaigrette
I am making Cuban Picadillo for dinner on Sunday, but I had difficulty finding any Cuban green vegetable side dishes. I needed to make more of my orange sugar, which always leaves me with two or three navel oranges to use up after I have removed all of the zest. I decided that an orange wedge and baby lettuce salad would do the trick. To make the vinaigrette “Cuban” I used lime juice and a bit of culantro Recaíto sauce.

Karl’s Chinese Broccoli with Oyster Sauce
On Christmas morning my family likes to go out for dim sum (点心; snacks), Chinese small plates. For the last several years we have gone to Tai-pan in Palo Alto, but this year Miriam talked up into trying something new. It was not quite a disaster, her suggested restaurant was over-flowing with a four hour wait, but we finally found a strip mall place that was actually excellent.

Karl’s Southern Roasted Brussels Sprouts and Cauliflower
I am making ham steak for this Sunday’s dinner. Miriam requested cauliflower and Jan loves Brussels sprouts. I had thought to make two separate dishes, but as I was looking at recipes on-line I saw that several combined these vegetables. For me ham calls for Southern (U.S.) cooking and it is not a Southern recipe if it doesn’t have bacon.

Karl’s Salt Pickled Cabbage with Japanese Chilies, Kyabetsu Shio-zuke Tsukemono
Japan has many Tsukemono, literally “pickled things.” When my father came back from Japan in the fifties, he introduced my family to Japanese cuisine. One dish that he learned to make was salt pickled cabbage (kyabetsu shio-zuke; キャベツ塩-漬け ).

Karl’s Asian Apple Cabbage Salad II
This seems to be my week for trying to improve recipes I have made recently. Last week I made an Asian influenced salad to go with my salmon teriyaki. I am making salmon again and the salad was good enough that I wanted to try and make it better.

Karl’s Red Pepper Tapenade II
Jan requested fresh crackers for her dinner with her friends. While they are good all by themselves—“Crack”ers, as Jan calls them—I thought I would add a spread for them while my diners waited for me to finish the other dishes. A tapenade is a primarily made from chopped olives, with a bit of oil to make it a paste.
