Karl’s Maafe Minus (West African Sweet Potato and Peanut Soup)

Jan’s friend is coming to join Jan in a visit to Santa Barbara—the yearly gathering of women who went through UCSB’s Anthropology Program in the late ‘70’s. I decided to make the sweet potato and peanut butter soup I made earlier this week for their lunch, but she is allergic to both  tomatoes and milk.

Karl’s Maafe, Mafé or Groundnut Chop (West African Sweet Potato and Peanut Soup)

Jan had a temporary crown put in on Monday and she wanted a soft creamy soup for dinner. In times past this would mean some variation of vichyssoise, potato and leek soup. I am always looking for something new, so I started thinking about an African sweet potato and peanut soup/stew.

Karl’s Scotch Lamb and Barley Stew (a Scotch Broth)

Jan, Big Eilene, and Little Eilene are off to Third Mesa to visit Hopi Eileen and to work on some quilts. While Jan is away, I tend to use up all of the lamb bones that have collected in my freezer to make a Scotch broth. This is a soup that I love, but that Jan cannot stand. Since I am feeding only myself, I decided to pare down the usual amount of liquid and make it more of a stew.

Karl’s Crab and Lobster Bisque

Jan asked for crab bisque for Christmas Eve dinner—she saw a recipe in this week’s food section. Chris is down south, so Miriam is coming over and we will be celebrating just a bit early—the last Hobbit movie and a nice dinner. To make it special, Jan also asked me to add some lobster to the bisque. Miriam’s request for this holiday meal is for potato latke and as a green we have agreed upon a carrot and spinach salad.

Karl’s Italian Vegetable Soup

Jan is hosting this year’s Ladies Christmas Get-together. Some of her friends are vegetarian. I am making a chicken dish for the meat eaters and a pasta dish for the pasta lovers. We decided that a soup would be a good dish for the vegetarians.

Karl’s Crab and Barley Bisque

It is crab season here in California and Jan really likes crab. Many seafood soups include potatoes and—with my diabetes—Jan is encouraging me to use starchy foods that are lower on the Glycemic index. Barley is only 25 on the GI—Russet potatoes are 111.

Karl’s Yosenabe II

Jan’s friends are coming to town for the Quilt Festival, for me this means several special dinners and this year Jan has ordered a special breakfast. For the first meal on Friday I decided to do a fish stew. Most of the European stews were out, because Barbara doesn’t like tomatoes. Japanese Yosenabe seemed the obvious choice.

Eilene is at Disneyland and Myr is not feeling well, so it is just Jan and me tonight. Jan wanted something that we could reheat when Eilene gets home late tonight, but also be good for lunches during the week. She decided that she wants ham and beans.

My potato plant died this week, so I harvested the potatoes. This was actually a sport from the year before, but if it really wanted to grow who am I not to water it? I ended up with five small potatoes. These were not enough to make a dish by themselves, so I would have to add them to something.

Karl’s Caldo Verde (Portuguese Kale Soup)

Adapted from a Leite’s Culinaria recipe

Most of the people of Portuguese ancestry in San Jose actually come from the Azores. Although many families have been here for more than one hundred years, they still maintain a strong sense of cultural identity and family ties to the home islands. If they have room in their yard for a garden, you may be sure that kale is growing in there. Caldo Verde, green broth, a kale and potato soup is a staple of Portuguese cuisine.
