Chicken and dumplings is an classic Southern (U.S.) that is basically a chicken stew topped with biscuit dough. At my house it is a weekday comfort food, whenever someone is stressed out. Although I make this dish once or twice a month, I realized that I took it for granted and have never posted about it.

This is a meal that started with a bottle of pickles. Jan went to the Maker Faire and came back with a jar of McVicker Pickles curried cauliflower. Chicken curry seemed like a good dish to go with them.

In truth, there is no such thing as truly no-salt cooking, many vegetables contain just a bit of salt all on their own. This stew is just as low salt as I can make it. Jan is visiting her sick brother this weekend. She decided to bring him some frozen home cooked meals as a mitzvah. He has recently been put on a super low salt diet. Many of the ways I would usually use to boost the flavor of a stew were right out—no soy sauce, anchovy paste, Worcestershire sauce, even commercial tomato paste—all have large amounts of salt.

Everyone has their own ideas about chili. A wide variety of dishes fall under the general heading of “chili.” Some think this dish should be only beef slow cooked in chili sauce. Others use a wide variety of meats—chicken, pork, turkey—in their chili. Still others say that it should include beans as well. Vegetarians get rid of the meat all together and still call it “chili.”

Jan has asked me to make a chili for a potluck with her new half-brother. The last time I made chili, I made a pot with beans and it was pretty hood, but I knew I could do better. Instead of ground beef I would use beef chuck and some rib meat. Last time, I also used canned broth as my braising liquid, this time I would braise pieces of marinated beef—to tenderness—and then use the braising liquid to re-hydrate and cook the beans.

Jan’s friends are descending upon us this weekend for the annual quilt festival. They are always a challenge to cook for because Barbara does not eat raw tomatoes and Pat does not eat “any animal with a face.” This means the “cute animals,” cows, pigs and sheep—chicken and fish apparently do not count as having faces.

Miriam has requested a Spanish style seafood stew for this Sunday’s dinner. What she meant was something like a cioppino with Spanish chorizo. A problem here is that she and her husband, Chris, are on the low-carb Adkin’s Diet.
