Karl’s Orange Infused Pancakes

Adapted from a Martha Stewart recipe

Note: I have been so busy with the holidays and posting big festival meals that some little gems have gone begging.

As much as I like to cook, breakfasts have not been a high priority for me. My secret sin is that my morning pancakes have always come from a box. Two months ago, my family woke up wanting pancakes and my cupboard was bare. Time to learn how to make them from scratch—“To the bat-internet!”

Karl’s Mashed Potatoes with Chives and Chicken Gravy

I am making a “festival meal” for one of Jan’s Chinese students with a roasted chicken. Mashed potatoes and gravy is a “must” side dish. For Thanksgiving I made these potatoes with turkey gravy, here I am making it with chicken gravy.

Karl’s Kūbide Meatballs in Sesame Sauce

I am making a festival meal for one of Jan’s Chinese students. I wanted to make as many dishes as possible to show respect. Last week, I had made kūbide for one of our meals*, but I had some meat mix left over. I decided to serve meatballs an hor d’oeuvre.

Karl’s Curried Deviled Eggs with Chives

Timing is always a challenge when making a large meal, so an appetizer or three is always a good idea to keep the hordes at bay. I had boiled some eggs for Jan’s Ethno Breakfast and I had a few left over. I am making a festival meal for one of one of Jan’s Chinese students, so I thought I would do a variation of the deviled eggs I made for her event. For Chinese guests, the more dishes you serve the higher respect you are showing.

Karl’s Shrimp and Wild Rice Stuffed Mushrooms II

Timing is always a challenge when making a large meal, so an appetizer or three is always a good idea to keep the hordes at bay. I made these for Thanksgiving and everyone—except Eilene—loved them. I am making a festival meal for one of one of Jan’s Chinese students, so I thought I would make a variation of them for my guests.

Karl’s Green Beans with Green Onions

One of Jan’s students is coming to dinner with her husband and she had asked for (American) festival food. I decided to do a chicken variation of my Thanksgiving turkey and I wanted a hot vegetable dish to go with it. Green beans are always a good choice, because you can steam them to just tender and then set them aside. Reheat them with some aromatics, just before serving, gives you a quick hot vegetable.

Karl’s Arugula and Cabbage Salad with Wild Rice

We are having a “festival dinner” for one of Jan’s students who is Chinese. In China, to show respect for your guest you offer many dishes. Including the gravy, I served ten dishes for this meal.

Karl’s Christmas Fine-Shred Orange and Lemon Marmalade

I have a few recipes that I make again and again. However, my penchant for never making the same recipe the same way twice means that they have morphed since I posted them years ago.  My Christmas marmalade is one such recipe.

After Thanksgiving you usually have the pleasant problem of what you are going to do with the leftovers.  Usually, I make mulligatawny. This year Jan asked for turkey tacos.
