Karl’s Smoked Salmon and Avocado Toast

About once a week we have what we call “deli dinner”—smoked salmon or lox, bread, cheeses, and salads. We usually get most of the ingredients for this meal from La Villa Italian Deli. However, since it is a family run business, they close for the entire Thanksgivings Day weekend.

We made do by getting our ingredients from Whole Food‘s this week. We had some hot smoked salmon leftover and I decided to use it for lunch the next day. How do you feed three people with only one ounce of fish? I decided to mix it with an avocado and some chives that I had remaining from making Thanksgiving dinner. Karl’s Fish Tacos with Sautéed Peppers

This is a recipe that has evolved over time. Originally, my fish taco filling was simply broiled fish with spices. Recently, I have started making chicken fajita tacos—seasoned chicken with sautéed peppers. Jan is always encouraging me to be more vegetable forward—less meat, more healthy vegetables. I decided to try mixing the peppers with the broiled fish. It has turned into a frequent weekday meal at our house.

Karl’s Broiled Salmon with Lemon Marmalade and Dill

It is a weekday meal and I wanted something simple and quick. I decided on broiled salmon, but how to make it special? I make a lot of marmalades—most of which I give away—but I usually have a few flavors in my kitchen. Today, I chose the lemon and dill goes nicely with lemon.

Karl’s Creole Jambalaya

In the 1970’s I was working for a diving company based in Belle Chasse, LA. I can’t think about N’Orl’ns (one word) without thinking about the food. For two years I lived off of Muffulettas, Shrimp Etouffee, boiled crawfish, and Jambalaya.  Louisiana food generally falls into two main cuisines Creole and Cajun, which roughly corresponds to city and country.  I have posted a Cajun jambalaya, but today I decided to go Creole.

Karl’s Fresh Salmon Patties

Jan and I are on our own this weekend as Eilene has gone to a CON in L.A. I did not feel like left over chili, but I am unused to cooking for only two. Jan has been complaining about red meat and starch heavy meals, so I finally settled on salad and salmon patties.

Many recipes for salmon patties call for using canned salmon—including my mother’s. For this meal, I decided I wanted to use fresh fish and my new favorite ingredient Japanese mayonnaise. Glancing at a few other recipes, I settled on my ingredients list and off I went.

Karl’s Tapas: Caballa Frita Rellena (Fried Stuffed Mackerel)

I am making a Spanish tapas dinner for this Sunday. There is a whole selection of fish tapas, many of which involve whole fried small fish. I had wanted to have fried anchovies or sardines, but El Niño had caused a collapse in the local fish supply.
