Karl’s Chinese Broccoli with Mushroom Sauce II

Asparagus are in season, but Miriam and I have difficulty with it. I decided to make two vegetable dishes for this Sunday’s dinner. I found some young Chinese broccoli (kai-lan) for us and I made it with a sight Macanese twist.

Karl’s Goan Urad Dal

I am making a Goan Dinner this Sunday. For those of my diners that are avoiding simple carbs, like rice, I wanted to provide a more complex carbohydrate option.  I looked at several recipes, but many of them seemed more generally Indian, rather than Goan. I freely adapted from one of the Goan recipes to create my own.

Karl’s Goan Cauliflower and Spinach

I am making a Goan Dinner this Sunday. I am not overly fond of cauliflower, but I have some diners who are on-again/off-again non-starch-eaters. I needed a dish to fill them up, if this was an off day. I decided a Goan cauliflower dish was what I needed. In the rest of India ghee—clarified butter—is the cooking fat of choice. In Goa they prefer to use coconut oil.

Karl’s Goan Jeera Rice

If no one has given me a challenge for a Sunday meal, I am left to find one for myself. I keep track of everyone who has “liked” one of my dishes and—when I have time—I run through their sites looking for inspiration and ideas. One such site is Linda Creation, which introduced me to Goan cuisine.

Karl’s Bartlett Pear Butter

Several weeks ago, I make a roasted chicken using some pear jam that my wife had been given. This was not your standard jelly or thick jam, but a clear jelly mixed with translucent pieces of fruit. I thought that some people might need a substitute for this ingredient in my recipe, so I posted a quick substitute that I had not actually tried to make. I had thought, how hard would it be to make this?

Karl’s Five Mushroom Soup

I have been craving oxtails recently. You may wonder what does “oxtail” have to do with “mushroom” soup. It all comes down to my wife’s, Jan’s, gallbladder—or rather the lack of the same.

Karl’s Asian Salad for a Crowd

Jan, my wife, is an anthropologist at SJSU. When she can, she arranges for her students to do “real world” projects for their assignments. This semester, she will be and her students will be part of a team, organized by NUMU Los Gatos, interviewing relocated American Indians who live in the South Bay. Having moved to the city—from the reservations in the 1950s, ‘60s, and 70s—their stories will soon be lost to history, if they are not recorded now.

Karl’s Mung Bean and Cabbage Slaw

I am making California Fusion Asian pork “tacos” for dinner. I thought it would be nice to have a cool tart slaw to cut the heavy meaty flavor of the filling. Sort of an Asian “taco” with leafy tortilla, filling, and slightly sour Asian “salsa.”

Karl’s California Fusion Tomato and Cucumber Salad

When I make shashlik and naan I make a Central Asian salad to go with it. Since I am breaking with the tradition menu for this meal, I do not feel constrained about the ingredients I put in my salad. There is not a lot of the European dill and fennel in Central Asia, but as a Californian I’m going to add it to my salad anyway.

Karl’s Uyghur Heirloom Carrot Salad

For my birthday, I am making a variation of  Uyghur Shashlik and Naan for dinner. Meat and bread call for salads and a traditional Xinjiang dish would be a carrot salad. The last time I made this I used large Asian carrots. Today, I decided to use the colorful heirloom carrots that have become common in California.
