Karl’s Blueberry Bran Muffins

Adapted from a Fiber One recipe

Miriam and Chris have gone off carbohydrates and gave us some Fiber One cereal. Earlier this week, Jan looked up a recipe for muffins and I adapted it to our tastes. While I am not a fan of bran, they were actually pretty good. Today, I had some blueberries starting to go bad on the counter and I thought blueberry muffins!

Karl’s Cranberry Banana Bran Mini-Muffins

Adapted from a Fiber One recipe

Miriam and Chris have gone off carbohydrates so, of course, they gave us what they did not plan to eat anymore. One thing they gave use is something we would never think to buy for ourselves—Fiber One cereal. I do not generally eat a bowl full of bran rods for breakfast, so Jan looked up a recipe for muffins. Their recipe was too sweet, but I adapted it to our tastes.

Karl’s Pomegranate Curd

Jan loves lemon curd, so a while ago I made some with Meyer lemons. It worked out so well that I have made it a couple of times. It is really tasty, but it does not last or keep long.

Karl’s British Scones with Currents II

Last week Jan had asked for scones, but I did not hear the request. (Hey! I have medical proof that I am slightly deaf in the range of women’s voices. It’s not my fault!) I woke up today planning to rectify the error. Tomorrow may be Mother’s Day, but today we have British scones.

In a recent Cooks Illustrated, they had a recipe for British scones. I had tied to make these close to the CI recipe a few weeks ago. This week I thought I would be a bit more creative.

Karl’s Corn Beef Hash

One of the joys of a St. Patrick’s Day meal of corned beef and colcannon is having corned beef hash the next day. In New England, they add beets to make it “Red Flannel Hash.” Personally, I think this is gilding the lily and not something a Californian, like myself, would be inclined to do.

Miriam’s Balsamic Strawberries

Myr and Jan went to a pot-luck at Pie Ranch yesterday (Hey, for them this is work). Myr’s contribution the meal was Balsamic Strawberries. These are good all by themselves, but they can also go equally well on a mesclun salad or vanilla ice cream.
